For the Lentil Salad:

For the Sauce:

- ๐ 1 Lemon, juiced

Instructions:
- Prepare the Lentils:
- Rinse and soak the lentils for about an hour. Drain and set aside.
- In a large pot, add a little oil and sautรฉ the garlic and onion until translucent.
- Add the soaked lentils, coriander, paprika, cayenne, and garlic powder to the pot. Stir well to combine.
- Dissolve the chicken bouillon in the Worcestershire sauce and add to the pot.
- Pour enough water to just cover the lentils and bring to a boil. Reduce the heat, cover, and let simmer until lentils are cooked through and tender (about 20-25 minutes).
- Adjust seasoning as needed.
- Prepare the Sauce:
- In a medium bowl, combine the plain yogurt, minced garlic, and lemon juice.
- Add in the pico de gallo, tomato, red onion, cilantro, and jalapeรฑo. Mix well.
- Season with lime juice, salt, and pepper to taste.
- Assemble the Salad:
- Once lentils are cooked, let them cool slightly.
- In a large serving bowl, mix the lentils with the prepared sauce until well coated.
- Garnish with extra cilantro or a squeeze of lime juice, if desired.
